- 250ml water with veg stock
- 250ml cooking oat cream
- 150g cut chicken breast

- Bananas, Ripe - 2 to 3 medium sized (1 1/4 to 1 1/2 cups mashed)
- Butter, salted or unsalted - 1/3 cup (76g)
- Baking soda - 1/2 teaspoon
- Salt - A Pinch
- Sugar - 3/4 cups or 1/2 cup for less sweet
- Egg, large - 1
- Vanilla Extract - 1 teaspoon
- Flour, all-purpose - 1 1/2 cups (205g)
Instructions
- Mash bananas with a fork until smooth
- Stir melted butter into bananas
- Mix baking soda and salt
- Stir in the sugar, beaten egg and vanilla extra
- Mix in flour
- Bake at 175 degrees for 50 to 60 minutes

Ingredients
- Butter - 80g
- Brown Sugar, Soft - 80g

- Flour, Self Raising - 2g???
- Flour, Plain - 8g???
- Eggs - 4
- Salt - A pinch
- Mixed spice - 2 level teaspoons
Instructions
- Cream butter and sugar
- Add slightly beaten eggs, gradually fold in flour, etc
- Add fruit, mix well together
- Put in lined cake tin (greaseproof - wax wrap)
- Bake at 150 degrees for 3.5 - 4 hours
Dairy and Egg-free Brownies
Ingredients
- 1 cup all purpose flour
- 1/2 cup cocoa
- 1 cup sugar
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup oat milk

Fudgy Chocolate Brownies
Ingredients
- Butter, unsalted - 1/2 cup melted and HOT
- Oil, cooking - 1 tablespoon (olive oil or cocnut oil are fine)
- Sugar, super file - 1 1/8 cup (caster sugar or white granulated sugar)
- Eggs, large - 2
- Vanilla Extract - 2 teaspoons
- Flour, all-purpose - 1/2 cup (or plain flour)
- Coca Powder, unsweetened - 1/2 cup
- Salt - 1/4 teaspoon
Instructions
- Preheat oven to 175 degrees
- Lightly grease square baking pan
- Combine hot melted butter, oil and sugar together in a bowl. Whisk well for about a minute.
- Add eggs and vanilla, beat until lighter in colour (about another minute)
- Sift in flour, cocoa powder and salt
- Gentle fold the dry ingredients into the wet ingredients until JUST combioned (do NOT over beat)
- Pour batter into prepared pan, smoothing the top out evenly
- (Optional) Top with chocolate chunks or chocolate chips
- Bake for 20-25 minutes or until the center of the brownies in the pan no longer jiggles
- Remove and allow to cool to room temp
Notes
- Hot melted butter creates crackly tops
- Whisk butter and sugar really well
- Whisk eggs for a good minute, this is crucial for the crackly top
- Do not over beat batter once the flour and coca are added, it creates air in the batter which gives a cake-like texture
- Do not overbake, I like mine slightly uncooked even
